I have been doing a bit of digging and not found a whole lot on this topic, mostly google turns up RS232 stuff when asked the title.
The guys over here,
https://www.st4makers.com/opc-server-for-arduino, have built a nice little OPC server for Arduino, after a little playing around I am turning the onboard LED on/off from the HMI screen.
Not much to setting it up either, just follow his install instructions. I loaded the UNOled sketch from the arduino IDE. Then I used dOPC to scan and make sure the Arduino server was running and get the proper server name. Pop that into advancedHMI with the proper variable name on the button and up and running.
